Il Timpano !!!

OK, Finally !



Sensational meal (recipes is on my Food Movies page) from the movie “Big Night” I have turned into "My family's big night".
I did my version of this dish. I used store bought macaroni, not home made, so it’s not 100% my work of art. But this is the test, to see is it really worth it? So next time, I'll do my pasta too.

It's hard to wait till the end!





STEPS:

Cook your own tomato sauce with vine*
 (believe me, it tastes so much better than the ones in a grocery store)


At the same time make Bechamel sauce**
 (milk, oil/butter, flour)



Mix cooked macaroni mix with Bechamel



Boil eggs and prepare all other ingredients:Parmesan cheese, Buffalo mozzarella, Cheese strings, Mozzarella and Prosciutto 




Make your meatballs***:



Timpano dough made from flour, water, oil and salt like "filo/pita dough" (explained on my blog):







It's time to put it all together:

It's true, worth every second of your work, this dish is angel's food.

Next time make your homemade pasta, for even better taste


*Tomato sauce with vine

2 tbsp olive oil
1/2 finely chopped onion,
3 garlic finely chopped cloves
1 big can of Italian peeled roma tomatoes with a tomato paste
 (or 1 lb of fresh peeled roma tomatoes and 2 tbsp tomato paste)
1/2 tsp dry basil, 1/2 tsp dry oregano (1/4- 1 tsp - depending on the taste)
1/2 cup vine
pinch of sugar,
salt, pepper to taste

Sauté onion and garlic on the oil . Add crushed tomatoes and paste, salt, pepper, sugar and cook on a low for about 15-20 minutes. Add vine and herbs. Cook for about 5-10 minutes more until you get more thick sauce.
If you use this sauce just for pasta and not Il Timpano, you can add at the end 1-2 tbsp of cream to get more smooth and less acidic sauce.

**Bechamel sauce (my version)

3 tbsp butter (I use olive oil)
2 tablespoons all-purpose flour
2 cups milk

In a medium saucepan, heat the butter/oil over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.
Add the milk and whisk continuously until very smooth. Bring to a boil. Remove from heat immediately. .

***Meatballs(my version)

1lb/ 450 gr ground beef
1 tbsp chopped parsley
1/4 cup grated Parmesan cheese
1/4 cup chopped prosciutto/pancetta
1/4 tsp dry basil
1/2 finely chopped onion,
2 crushed garlic cloves
1 tsp salt,
1/4 tsp pepper

Mix all the ingredients together and make 2-3 cm  big meatballs. Bake in the oiled pan by turning all the sides to bake equally, for about 20 minutes.
If making it as a separate dish, spread over tomato sauce* and add some pasta.
