Gollum Birthday Cake
It was a birthday time again in our household.
For someone who is nine years old and loves hobbits, Gollum from Lord of the Rings was a perfect choice for a cool cake.
It would have been easier to make it from sugar paste like many professionals do, but I've decided to use baked pieces of cake and egg white icing instead.
At the end, the entire cake was edible, much tastier, and looked pretty cool!
Gollum cake recipe
(Marzipan chocolate cake)
Almond cake layer:
150 g marzipan
1 tbsp sugar
3 tbsp ground almond
1 tbsp almond extract
2 tbsp cocoa
5 eggs separated
Chocolate cake layer:

sugar 300 g
flour white 175 g
cocoa powder 50 g
baking powder 2tsp
baking soda 2tsp
salt 1/2 tsp
2 eggs
olive oil 100 ml
vanilla essence 2 tsp
milk 165 ml
water - boiling 165 ml
Dark chocolate muss fill:
200 g melted dark chocolate
1/3 cup whipping cream
2 tbsp sugar
1 tbsp cocoa
4 egg whites + 1 tbsp sugar
Raspberry sauce:
300 g raspberries
1/3 cup sugar
1 tbsp water
Also:
1/2 cup chopped roasted almonds
Whipping cream
For the Gollum's head:
Icing:
2 egg whites
1 cup of sugar
2 tbsp cold water
2 drops of red food color, 6 drops of yellow color
for the eyes: 2 green skittles (candy)
for the hair: wet soba noodles
Bake almond and chocolate cake in a medium sized pans to get three layers of almond and two layers of chocolate cake.
Almond cake: Separate eggs and mix egg whites in one bowl to get soft peak; add sugar at the end of mixing. In the second bowl mix other ingredients and mix in the egg whites from the first bowl. Incorporate them very lightly so the mixture stays fluffy. Bake on 325F/175C for almost one hour, until it is baked inside. Do not open the oven for the first fifteen minutes. Take out and cool. Split in three layers.
Chocolate cake: See the link. Split in two layers, same thickness as the almond cake layers.
Muss filling: Melt chocolate over double broiler, and cool it aside. Whip cream with sugar. Whip the egg whites with 1 tbsp sugar and cocoa. Add into the mix of chocolate and cream.
Raspberry sauce: Cook fruits, water and sugar over medium heat until the mixture has jam consistency. Cool.
Icing: Over double broiler, beat all the ingredients for about ten minutes until you get white thick mass.
Prepare the icing when you have all the pieces of the cake baked and assembled!
Cake assembling:
First lay an almond layer, than 1/4 of the muss filling, than a chocolate layer. Spread over 1/2 of raspberry sauce and chopped roasted almonds and the muss. Repeat it. At the top, finish with an almond layer. Cover the cake with whipping cream or egg white icing.
Gollum head and hands are made from baked almond and chocolate cake, combined and covered with egg white icing.
Methodology itself is difficult to describe since it involves lots of improvising. The same applies to the amount of the cake and icing used, use a "trial and error" approach.
I used toothpicks to attach the head to the cake, because it was too heavy to be attached just with the icing.
