Last minute Recipes, Crafts and Ideas for Mothers Day
One of my previous surprises was this homemade soup made by my girls |
Today is Mother's Day (North America).
Remember your mom more than just this one day and try to be creative, that'll be the biggest present.
Here are last minute recipes and crafts to surprise moms not only on this, but any other day
of year.
It's Mother's Day, so I will feature first here the recipe I'm the most proud of - my daughter's!
I'm proud because that's something she perfected independently, without me being involved at all.
That's why I start this post with this recipe.
Thanks Nat!
Nat's Marble Cake
Ingredients
1/2 cup unsalted butter, room temperature
2 cups cake flour (not self-rising)
2 tsp baking powder
1/4 tsp salt
1/2 cup coconut sugar
3 large eggs, room temperature
1 tsp pure vanilla extract
2/3 cup milk
4 tbsp quality cocoa powder
Preheat oven to 350F/175C. Oil well mid-size loaf pan; set aside. Combine in a bowl cake flour, baking powder, and salt.
Beat the butter and sugar until light and fluffy. Add eggs, one at a time, beating until combined. Mix in vanilla. Add flour mixture then the buttermilk. Mix well. Split batter in two.
In another bowl, mix cocoa and 1/4 cup plus 2 tablespoons boiling water with a rubber spatula until smooth. Add the cocoa mixture to one half of cake batter; stir until well combined. Now you have dark and light batter.
Spoon batters into the prepared pan by pouring spoonful of light and dark batter one beside each other, to simulate a checkerboard . To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion.
Bake, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes.
Turn out cake from pan and cool completely on the rack. Cake can be kept in an airtight container at room temperature up to 3 days.
